Starts Speculos with the IOTA app v1.0.1 on a Nano S+ and runs the Ledger sign-and-send example against it in CI;
make speculos-start/speculos-stopdo the same locally. Stacked on #1755, which adds the example.The run is part of the
examplesjob instead of its own job, because that job already starts localnet and installslibudev-dev. The approval script only presses buttons over the REST API, so it runs alongside the example without opening a second APDU connection. That second connection would crash the app.The Speculos image is pinned to v0.27.1, since v0.27.4 is only a few days old.
