Update /rollup redirect target to acmfeup.eu

/rollup was still redirecting to an outdated Google Forms URL in next.config.ts. This updates the route so requests to /rollup now permanently resolve to https://acmfeup.eu.

• Redirect mapping update
  • Changed the destination for the /rollup entry in Next.js redirects() from the old form link to the new canonical domain.
  • Kept the redirect as permanent: true to preserve long-term routing behavior.
